- 1 white onion, chopped
- 1 garlic clove, chopped
- 3 Tbsp lemon juice
- ¼ tsp. sea salt
- 4 Roma tomatoes, chopped
- 1 cup orange bell pepper, chopped
- 1 cup black beans
- 1½ cup corn kernels
- ½ cup cilantro, roughly chopped
In a large bowl, combine all ingredients and stir well.
Allow flavors to marinate for about 2 hours then serve and enjoy!
